Quarantine Banana Bread

Learning to be a better baker has been on my new year's resolution list for the past several years.


While I can intuitively create cooking recipes, baking takes a level of precision and chemistry that I just haven't quite yet figure out. Luckily, my best friend Abby is an amazing baker.


Here is her banana bread recipe 🤍



INGREDIENTS:

  • 1 cup sugar

  • 3 Tbsp salted butter

  • 2 eggs

  • 3 Tbsp sour milk (1 tsp vinegar in 1/2 cup milk)

  • 2 cup flour

  • 1 tsp baking soda

  • 2-3 overripe mashed bananas

  • 1 cup walnuts (if desired)


INSTRUCTIONS:

  • Preheat oven to 350

  • Grease and flour glass bread pan

  • Beat sugar, butter, eggs and sour milk

  • Combine flour and baking soda in separate bowl, sift into sugar mixture

  • Mix well

  • Mash bananas and stir into batter, do not over mix. Add nuts if you like. 

  • Bake for 50mins-1 hr, until top springs back up when pressed (if you use a dark colored pan, start testing readiness after 45 mins)

  • Let stand for 15 mins then remove from pan


For sticky top (the best) put into fridge until cooled through. 


Serve in thick slices w butter if preferred, can quickly fry a slice on a pan to toast it.
