Kimchi mignonette with Taylor Shellfish oysters
A great mignonette is usually all an oyster needs.
I would also argue that Taylor Shellfish oysters rarely need any fixings but here is a great kimchi mignonette recipe using the end juice of your kimchi jars. Cheers!
These beauty's are Pacific Oyster from Taylor Shellfish Farms.
1/2 cup minced shallots (about 2 1/2 ounces)
1/4 cup kimchi juice
1/4 cup clear, unseasoned rice vinegar*
1/8 teaspoon of sugar
1/8 teaspoon of salt
Finely mince the shallots and combine with the kimchi juice, vinegar, sugar and salt
Mix and stir everything together and serve with the oysters
Chill for at least 30 minutes before serving
**Tip** I love chilled mignonette so make sure to keep it on ice or chill in the fridge before serving.
