Kimchi mignonette with Taylor Shellfish oysters

A great mignonette is usually all an oyster needs.

I would also argue that Taylor Shellfish oysters rarely need any fixings but here is a great kimchi mignonette recipe using the end juice of your kimchi jars. Cheers!

These beauty's are Pacific Oyster from Taylor Shellfish Farms.


  • 1/2 cup minced shallots (about 2 1/2 ounces)

  • 1/4 cup kimchi juice

  • 1/4 cup clear, unseasoned rice vinegar*

  • 1/8 teaspoon of sugar

  • 1/8 teaspoon of salt


  • Finely mince the shallots and combine with the kimchi juice, vinegar, sugar and salt

  • Mix and stir everything together and serve with the oysters

  • Chill for at least 30 minutes before serving

**Tip** I love chilled mignonette so make sure to keep it on ice or chill in the fridge before serving.
